How can I gain some weight without eating foods high in unsaturated fat
and cholesterol? I am very active, and underweight. I don't want to
eat alot of junk/unhealthy foods. Thank you.

You can work out at the gym and eat protein. Then you will gain muscle
mass.
I lost weight with a low fat diet. You could do the opposite with a higher
fat diet. Look at the calories and the calories from fat (fat calories). To
loose weight, calories from fat should be 30% of the calories.
So if 100 calories, calories from fat should be 30 or less.
If 200 calories, calories from fat should be 60 or less.
Try more than 30% fat calories. Eat hot dogs, hamburger sold in a tube,
salad dressing, balogna, real butter, mayonaise, sausage, salami, etc. Also
sit around all day in front of the TV and don't exercise any.
Older people drink Ensure Plus (expensive) or products like that. May want
to ask the pharmacist too. (Link below)

I'm the same way, I am very active, not underweight though, but on the low
side, 154 and 5'10". I find it hard to gain mass in general, I workout A
LOT, and tend to become slender and toned as opposed to bulky and big. I'm
not complaining
, but I rarely gain weight, even if I eat tons of meat and
fish... and I do eat more than the average person.
The worse way to gain weight is through eating lots of starchy breads, and
through fat, as you seem to know already. Your metabolism is probably
really high too, which will make it harder, mines high so calories burn off
quickly. I used to weigh 149lbs, but I have been working out harder for a
month and have gained I guess 6 lbs in muscle. I'm going to amp it up to
see what happens... I tend not to ever go beyond 160lbs, I think people have
equilibriums that are hard to go above.

I would be more concerned about saturated fats than unsaturated.
To gain weight you will need to eat over 500 more calories a day.
Eat 4-5 meals a day, moderate sizes vs. 3 large ones
Try http://www.menshealth.com or http://www.mensfitness.com for what to eat.
I eat alot of turkey for sandwiches and bake chicken breasts for dinners.
Consider taking a protein supplement shake.
