New lab? Different test? Maybe it varies from 3.4 (= 3 on the label) and 3.6
(=4 on the label) and they have to put on whatever is the most recent
result?

I don't worry about a carb-gram or two anyway.

I buy unsalted cottage cheese, which also happens to be non-fat, then
usually add a bit of mayo to it. The "regular" (any fat %) c.c. tastes too
salty for me.

Do they add food starch to c.c.? wouldn't that have to be on the label too?

The label lists either "modified food starch" or "food starch". Can't
remember which and don't feel like getting up to check. I've never heard of
unsalted cottage cheese. I used to be able to eat the 4% kind, but that
tastes too greasy to me now. Don't much care for fat free, but can eat some
1%. The problem with many of them is that they taste either sour or
flavorless. I guess I'm just picky.

As for the carbs, I'm not really worried. But I do often have a problem
with high morning fasting BG and I try to eat little or no carbs when this
happens.

The unsalted is Giant food store brand. I don't know if other places have
it.
I think Giant still has their own dairy operation. I worry that whatever
they're doing now they'll stop, as I prefer their brand of milk, cottage
cheese, yogurt, and ice cream!
